BHT is an organic compound derived from phenol. Though it has been used as a food additive and preservative, BHT shows an antioxidant activity as well.
Applications of BHT:
- To prevent from rancidity (lipid peroxidation), BHT is added to polyunsaturated fats.
- To extend shelf life and preserve of certain foods.
It is claimed that BHT has an anti-viral property against herpes virus. Along with the amino acid lysine, BHT may be useful in cold sore. However, due to its potential toxic effects on the liver and kidneys, BHT is not a popular antioxidant and we do not recommend taking BHT or any BHT – containing foods.
